Paper or online?
Paper works when everyone signing up is in one room, like a table at back-to-school night or a sheet on the church bulletin board. If people sign up from home, the same sheet online saves you the follow-up: rows close at the number you set, everyone gets a reminder, and anyone who can't make it cancels with one tap so the spot reopens.
